Thank you for the nice, illustrated article (“Into the frying pan: Kitchen class helps immigrants prep for better economic futures,” Gazette, April 27) about new and practical life lessons that immigrants learn at the Center for New Americans. It will help them get jobs.
However, the instructor from Holyoke Community College, though well-intentioned, needs to be faulted about not teaching the first step in any public food venture: People, put on gloves!
