A while back I wrote a column about how many National food days there are. I have a certain fascination for these days. There are more “national” days than you can shake a stick at. And that’s a lot! I think.
I have a habit of declaring my own “national” days. One of my favorites — after I barely make it to work alive — is National Bad Driver Day. Unfortunately I can’t register it and make it official because it happens at least twice a week.
Why am I going on about this you might ask? Well, because someone told me today is National Guacamole Day. Not to be confused with National Avocado Day, July 31 or National Spicy Guacamole Day, Nov. 14.
Just simple National Guacamole Day. Simple. The way I like my guacamole: avocado lightly mashed, fresh lime juice and salt. That’s it. Served with tortilla chips.
And to make it a real celebration, maybe a Margarita on the side. Even if it isn’t National Margarita Day. Which, by the way, is July 24.

One must always have fresh limes on hand.
They are one of my kitchen foodstuff essentials, for the aforementioned guacamole and all sorts of tequila and rum based cocktails. My favorite is a caipirinha.
And they are essential for dressings, stopping food from turning brown and adding a touch of acidity to dishes.
I always marvel at what a wonderful taste fresh lime is. And no, it is not just a lemon substitute.
